Monte del Cuca 2017
Grape variety: 100% garganega.
Soil: volcanic hillside in Gambellara Classic area.
Harvest: by hand at the first half of October.
Wine making process: after manually harvesting in boxes, the grapes brought to the cellar are de-stemmed and fermented with wild yeast on the skins without the control of temperature. After fermentation it stays in stainless steel tank with its lees for a period of at least two years. Bottled unfiltered, follow a period of aging in bottle.
